And day 7 closes with the cold that will not die continuing to stalk me. The nasal spray works miracles at night, and lingers on into the morning & early afternoon of the following day, and then its back to massive stuffiness by late afternoon. Yes, I'm a big baby, but I can't remember the last time that I was sick for so long.
In other news, I made a very tasty dinner tonight. Technically, I made it last night, but baked it tonight. I cooked 2.5 cups of penne pasta with pasta sauce and 1 diced onion. In a large pyrex baking dish, laid down a thin layer of the pasta mixture. Then I sliced up 1 large eggplant, lengthwise, and covered the past with the slices. On top of that was diced orange & yellow bell peppers, a little bit of shredded cheddar, and low fat ricotta cheese. Then some more pasta sauce, another layer of the remaining eggplant, sliced tomatoes, and finally the rest of the penne on top. Denise put it into the oven at 450F for an hour before I got home, and its super tasty!
