Today sucked. It was just me at work today, and it was so busy this morning, and i'm just utterly exhausted tonight.
I decided to get semi-creative for dinner, and I made eggplant parmagiana for dinner from scratch. I sliced up one eggplant, pressed some of the water from each slice. Then dipped each slice in an egg-milk mixture, and coated in breadcrumbs. Fried each slice up. Once that was done, I layered the fried eggplant into a pyrex baking dish, with tomato sauce, mozzarella cheese, oregano, and onions. Baked at 350F for 30 minutes, and then coated the top with more mozzarella. It came out really well.
I fear the rest of this week is going to be equally exhausting.
