catching up
I spent much of the day today (and yesterday) catching up on some work for work. It was productive, although not my idea of a fun way to spend a long weekend. But i have no one to blame but myself. Its not that i was technically behind, but more that I knew i'd fall behind if I didn't do this stuff before Tuesday.
Last night Denise made incredibly tasty chicken fajitas, and she got this brainstorm to make the soft tortillas into semi-crunchy bowls. It was really an excellent idea. Tonight, i kinda sorta made the same thing for dinner. I ended up making white rice with onions, then threw cayenne & taco powder into it, and added the juice from one fresh lime. Then I got out the leftover chicken from last night's dinner, and added it to the rice. Finally, I laid down some shredded cheddar on the bottom of a tortilla, and dumped the steaming hot rice mixture on top, and folded the tortilla up into a burrito. Its very tasty. yum.
